Minnesota Minnestrone


Tuscan Minestrone with wild rice instead of pasta. Everything else is still there: red beans, garbanzo beans, onions, celery, carrots, herbs & spices. You will need 32-oz oz tomatoes, fresh or canned.

  • Makes 9 cups

  • Instructions: Soak beans in 4 cups water, then add remaining package ingredients and tomatoes. Simmer 1 to 2 hours until done. Garnish with shredded cheese or a dollop of sour cream.

  • Quick cook in an instant Pot. All all ingredients and cook 50 minutes using Meat/Stew setting.

  • Add diced smoked sausage or chopped clams.

  • Leftovers can be frozen. Ideal for next day or at-work lunches
